Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

¾ cup milk

3 tablespoons unsalted butter, melted

1 cup shredded mozzarella cheese

1 cup ricotta cheese

4 cloves garlic, minced

¼ cup chopped fresh parsley

½ teaspoon red pepper flakes (optional)

1 egg, beaten (for egg wash)

Olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, mix the milk and melted butter. Gradually add this mixture to the dry ingredients, stirring until a dough forms.

Knead the Dough: Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth.

Prepare the Cheese Filling: In another bowl, mix the mozzarella, ricotta, minced garlic, chopped parsley, and red pepper flakes (if using) until well combined.

Form the Bombs: Divide the dough into 12 equal pieces. Flatten each piece into a small circle, and place a generous scoop of the cheese mixture in the center.

Seal the Bombs: Fold the edges of the dough over the filling and pinch to seal tightly, forming a ball. Repeat with the remaining dough and cheese filling.

Egg Wash: Place the cheesy bombs on the prepared baking sheet. Brush the tops with the beaten egg and drizzle a little olive oil over each bomb.

Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.

Serve Warm: Remove from the oven and let cool for a couple of minutes before serving.

                      Prep Time: 20 minutes | Total Time: 40 minutes | Servings: 12
