2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1 cup cooked quinoa or rice

1 cup black beans, drained and rinsed

1 cup corn kernels

1 cup shredded lettuce

1 medium tomato, diced

½ cup shredded cheese (cheddar or Monterey Jack)

½ cup chipotle ranch dressing (store-bought or homemade)

4 large flour tortillas

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a small bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, ground cumin, salt, and pepper. Coat the chicken breasts in the spice mixture and let them marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).

    Grill the Chicken: Preheat your grill to medium-high heat. Grill the marinated chicken for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let it rest for 5 minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, combine the cooked quinoa or rice, black beans, corn, diced tomato, shredded cheese, and half of the chipotle ranch dressing. Mix until well combined.

        Assemble the Burrito: Lay a flour tortilla flat on a clean surface. Place a generous scoop of the filling mixture in the center of the tortilla, followed by a few slices of grilled chicken, shredded lettuce, and a drizzle of the remaining chipotle ranch dressing.

          Wrap the Burrito: Fold the sides of the tortilla inward, then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining tortillas and filling.

            Optional - Grill the Burrito: For an extra crispy exterior, place the burrito seam-side down on the grill and press gently for about 2-3 minutes on each side until golden brown.

              Serve: Slice the burrito in half, sprinkle with fresh cilantro if desired, and serve with extra chipotle ranch dressing or your favorite salsa on the side.
