Ingredients

1 lb large shrimp, peeled and deveined

3 cups fresh spinach

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Gruyère cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 teaspoon lemon juice

1/2 cup breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Season with salt, black pepper, and red pepper flakes if using. Remove from heat.

In the same skillet, add the spinach and cook until wilted, about 2 minutes.

In a mixing bowl, combine the heavy cream, lemon juice, and half of the Gruyère cheese. Add the cooked shrimp and spinach mixture to this bowl and gently stir to combine.

Transfer the shrimp and spinach mixture into a buttered or greased baking dish.

Sprinkle the remaining Gruyère cheese and the Parmesan cheese evenly over the top.

In a small bowl, mix breadcrumbs with a tablespoon of olive oil and a pinch of salt. Sprinkle this mixture over the cheese layer.

Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.

Remove from the oven and let it sit for a few minutes. Garnish with chopped parsley before serving.
