1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) red enchilada sauce

8 small corn tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Add minced garlic and sauté for another minute.

      Cook the Beef: Add ground beef to the skillet. Break it apart with a spatula. Season with ground cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes. Drain any excess fat.

        Combine Fillings: Stir in black beans, corn, and half of the enchilada sauce, mixing well to combine.

          Prepare the Tortillas: In a separate skillet, lightly warm the corn tortillas for 10-15 seconds on each side to make them pliable.

            Fill the Tortillas: On each tortilla, place a generous amount of the beef mixture and sprinkle a tablespoon of shredded cheese. Roll up the tortilla tightly and place seam-side down in a baking dish.

              Assemble the Enchiladas: Repeat the filling and rolling process until all the tortillas are filled. Pour the remaining enchilada sauce over the top, ensuring all enchiladas are covered. Sprinkle the rest of the cheese over the sauce.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5-7 minutes until the cheese is bubbly and slightly golden.

                  Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired. Serve with sour cream on the side.
