Ingredients

9 lasagna noodles

2 cups cooked ham, diced

1 bunch asparagus, trimmed and cut into 1-inch pieces

2 cups ricotta cheese

1 cup grated Parmesan cheese

3 cups shredded mozzarella cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano and basil)

Salt and pepper, to taste

4 cups marinara sauce

Fresh parsley, for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package directions until al dente. Drain and set aside.

Prepare Asparagus: Blanch the asparagus pieces in boiling water for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Mix Cheese Filling: In a large bowl, combine the ricotta cheese, half of the Parmesan, the egg, garlic powder, onion powder, Italian herbs, and a pinch of salt and pepper. Stir until well blended.

Layer Ingredients: Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish. Place three lasagna noodles over the sauce.

Spread Filling: On top of the noodles, spread half of the ricotta mixture, followed by half of the diced ham, half of the asparagus, and a third of the mozzarella cheese. Pour a layer of marinara sauce over this.

Repeat Process: Add another layer of noodles, followed by the remaining ricotta mixture, ham, asparagus, and another third of the mozzarella cheese. Layer again with marinara sauce.

Top Layer: Finish with a final layer of noodles, the remaining marinara sauce, and top with the last of the mozzarella and Parmesan cheese.

Bake: Cover the dish with aluminum foil (to prevent sticking, spray the foil with cooking spray if necessary). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Cool & Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
