4 medium-sized russet potatoes

1/2 cup sour cream

1/2 cup cream cheese, softened

1/4 cup unsalted butter, melted

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/4 cup green onions, sliced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup mini marshmallows (for the topping)

1/4 cup chocolate syrup (for a unique twist)

Prep the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and pierce them several times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

    Make the Filling: While the potatoes are baking, in a mixing bowl, combine the sour cream, softened cream cheese, melted butter, garlic powder, onion powder, and half of the cheddar cheese. Mix well until smooth.

      Prepare the Bacon and Onions: In a separate bowl, combine the crumbled bacon and sliced green onions. Set aside.

        Stuff the Potatoes: Once the potatoes are baked, take them out of the oven and let them cool for a few minutes. Carefully slice each potato in half lengthwise and scoop out some of the insides, leaving a little potato flesh on the skins.

          Combine Ingredients: Fold the scooped-out potato flesh into the cream cheese mixture. Add the bacon and green onion mixture to this and combine thoroughly. Season with salt and pepper to taste.

            Fill the Skins: Spoon the mixture back into the potato skins, mounding them slightly. Top each filled potato with the remaining cheddar cheese.
