8 oz spaghetti or your favorite pasta

1 cup mixed olives (green, black, and kalamata), pitted and chopped

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1/3 cup extra virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Zest and juice of 1 lemon

Cook the Pasta: Begin by boiling a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and red pepper flakes, sautéing for about 1 minute or until fragrant. Be careful not to burn the garlic.

      Add Olives and Tomatoes: Stir in the chopped olives and sun-dried tomatoes, cooking for another 2-3 minutes until heated through.

        Combine Pasta: Add the drained pasta to the skillet. Toss everything together, adding a splash of the reserved pasta water to loosen the mixture as necessary.

          Season and Finish: Season with salt and pepper, then add the lemon zest, lemon juice, and fresh parsley. Toss again to combine all ingredients evenly.
