1 (8 oz) package cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup fresh raspberries (plus extra for garnish)

1 package of mini phyllo pastry cups (15 count)

1 tablespoon lemon juice

Zest of 1 lemon

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) if you prefer warm bites. If serving cold, you can skip this step.

    In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat the mixture until it’s creamy and smooth.

      Gently fold in the fresh raspberries, lemon juice, and lemon zest, being careful not to mash the raspberries too much.

        Place the mini phyllo pastry cups on a baking sheet. If you prefer them warm, lightly toast the empty cups in the preheated oven for about 5 minutes until crisp.

          Remove the cups from the oven and let them cool for a couple of minutes.

            Using a spoon or a piping bag, fill each phyllo cup with the raspberry cream cheese mixture.

              Garnish each bite with a few whole raspberries and a mint leaf, if desired.

                For the best flavor, chill the bites in the refrigerator for at least 30 minutes before serving.
