12 oz fettuccine or penne pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 red bell pepper, julienned

1 yellow bell pepper, julienned

1 green bell pepper, julienned

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 cup coconut milk

1/2 cup heavy cream

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt, pepper, paprika, thyme, and cayenne. Sauté for 2-3 minutes until the shrimp turns pink and is cooked through. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add a little more olive oil if needed. Add the onion and sauté for 2 minutes until translucent. Then, add garlic and bell peppers. Cook for another 4-5 minutes until the peppers are tender.

        Create the Sauce: Reduce the heat and pour in the coconut milk and heavy cream, stirring well. Allow the sauce to simmer for about 5 minutes. Season with additional salt and pepper to taste.

          Combine: Add the cooked pasta to the skillet with the sauce and gently toss to coat the pasta thoroughly. Fold in the cooked shrimp and heat everything together for another minute to meld the flavors.

            Serve: Garnish with fresh parsley and serve immediately, enjoying your vibrant and flavorful Rasta Pasta!
