8 sheets rice paper

200g fresh salmon fillet, skinless and boneless

1 cup rice vermicelli noodles, cooked

1 cup mixed greens (lettuce, mint, and cilantro)

1 medium carrot, julienned

1 cucumber, julienned

1 red bell pepper, thinly sliced

1 avocado, sliced

2 tablespoons sesame oil

Salt and pepper to taste

Cooking spray or olive oil for spraying

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Season the salmon fillet with salt, pepper, and a drizzle of sesame oil. Bake in the preheated oven for about 12-15 minutes or until cooked through. Once done, allow it to cool slightly, then flake it into bite-sized pieces.

      Prepare the rice vermicelli noodles according to package instructions, then drain and set aside.

        Fill a large shallow dish with warm water. Dip a sheet of rice paper into the water for about 10-15 seconds until it softens, then lay it flat on a clean work surface.

          On the lower third of the rice paper, place a small handful of mixed greens, a portion of the cooked vermicelli noodles, some of the julienned carrot, cucumber, and red bell pepper, a couple of avocado slices, and a portion of the flaked salmon.

            Carefully fold the sides of the rice paper inward over the filling, then roll it up tightly from the bottom to the top to form a spring roll.

              Place the rolled spring rolls seam-side down on the prepared baking sheet. Repeat the process with the remaining ingredients.

                Lightly spray or brush the tops of the spring rolls with olive oil or cooking spray. Bake in the preheated oven for about 15-20 minutes or until they are golden and crispy.

                  Let the baked spring rolls cool for a few minutes before serving.
