4 large russet potatoes, peeled and cubed

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup diced onion

3 cloves garlic, minced

4 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 teaspoon chopped fresh parsley (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, bring salted water to boil. Add the cubed potatoes and cook until tender, about 15 minutes. Drain and set aside.

      In a saucepan, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.

        Stir in the heavy cream, salt, black pepper, and paprika. Bring the mixture to a gentle simmer.

          In a large mixing bowl, combine the cooked potatoes with the cream mixture, mixing gently to coat the potatoes evenly.

            Transfer the potato mixture to a greased 9x13 inch baking dish. Spread it out evenly and sprinkle the shredded cheddar and grated Parmesan cheese on top.

              Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

                Once done, remove from the oven and allow to cool slightly. Garnish with chopped fresh parsley before serving.
