4 medium Yukon Gold potatoes, peeled and cubed

1 cup heavy cream

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/4 cup unsalted butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the cubed Yukon Gold potatoes and cook until fork-tender, about 15 minutes. Drain and set aside.

      Prepare the Cream Mixture: In a mixing bowl, combine heavy cream, cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until smooth.

        Mash the Potatoes: In a separate bowl, mash the drained potatoes with the unsalted butter until creamy. Incorporate the cheese mixture into the mashed potatoes, blending until fully combined and cheesy.

          Add Cheese: Fold in half of the grated cheddar cheese into the potato mixture, then transfer the mixture into a greased baking dish.

            Top with Cheese: Sprinkle the remaining cheddar cheese evenly over the top of the potato mixture.

              Bake: Bake in the preheated oven for 25-30 minutes or until the top is bubbly and golden brown.
