6 large eggs, hard-boiled and peeled

1/3 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 celery stalk, finely chopped

1/4 cup red onion, finely chopped

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

Salt and pepper to taste

Fresh arugula or lettuce for serving

Optional: Sliced radishes for garnish

Begin by hard-boiling the eggs. Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat, then cover and remove from heat. Let them sit for 12 minutes before transferring to an ice bath to cool.

    Once cooled, peel the eggs and chop them into small pieces. Place them in a large mixing bowl.

      In a separate bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper. Stir until smooth and creamy.

        Pour the mayo mixture over the chopped eggs. Add the finely chopped celery, red onion, and dill. Gently fold everything together until well mixed.

          Taste and adjust seasoning with more salt and pepper if needed.

            Serve the egg salad over a bed of arugula or lettuce for a fresh touch. Garnish with sliced radishes for added crunch and color, if desired.
