2 lbs Yukon gold potatoes, peeled and cubed

1/2 cup heavy cream

4 tablespoons unsalted butter

1 cup kale or cabbage, finely chopped

1/2 cup green onions, sliced

Salt and pepper, to taste

For the Savory Sage Mushrooms:

8 oz cremini mushrooms, sliced

2 tablespoons olive oil

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

1 garlic clove, minced

Salt and pepper, to taste

Instructions
 

Prepare the Potatoes: In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well and return to the pot.

    Make the Colcannon: Add the heavy cream and butter to the drained potatoes. Mash until smooth. Stir in the chopped kale or cabbage and green onions. Season with salt and pepper to taste. Keep warm on low heat.

      Cook the Mushrooms: In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned, about 5-7 minutes.

        Add Flavor: Stir in the chopped sage and minced garlic to the mushrooms. Cook for another 2-3 minutes until the garlic is fragrant. Season with salt and pepper.

          Serve: Plate a generous scoop of the creamy colcannon and top with the savory sage mushrooms.
