1 lb ground beef (80/20 blend)

4 slices American cheese

2 slices aged cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 burger buns

1 cup shredded lettuce

1 large tomato, sliced

1/2 red onion, thinly sliced

Pickles (optional)

For the Special New York Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon mustard

1 tablespoon sweet pickle relish

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Prepare the Sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, sweet pickle relish, smoked paprika, and Worcestershire sauce. Mix well and season with salt and pepper. Set aside in the fridge to chill.

    Form the Patties: Divide the ground beef into 4 equal portions (4 oz each) and gently shape them into balls. Be careful not to overwork the meat.

      Heat the Grill or Skillet: Preheat a grill or cast-iron skillet over medium-high heat. Once hot, reduce to medium.

        Smash the Burgers: Place one beef ball on the grill/skillet and using a heavy spatula, smash it down firmly to about a 1/2 inch thickness. Season with salt, pepper, garlic powder, and onion powder.

          Cook the First Side: Let the burger cook for about 2-3 minutes until a crust forms.

            Flip and Add Cheese: Flip the burger and immediately place 1 slice of American cheese and 1 slice of aged cheddar on top. Sear for another 2-3 minutes until the cheese is melted and the burger is cooked through. Repeat with the remaining balls.

              Toast the Buns: While the burgers are finishing up, toast the burger buns on the grill or in a separate pan until golden brown.

                Assemble the Burgers: Spread a generous amount of the Special New York Sauce on the bottom bun. Layer with shredded lettuce, burger patty with melted cheese, slice of tomato, red onion, and delicious pickles if using. Top with the other half of the bun.
