4 large potatoes, peeled and sliced

1 large onion, thinly sliced

6 slices of bacon, chopped

4 pork sausages, cut into chunks

2 cups chicken broth

1 cup water

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon black pepper

Salt to taste

Fresh parsley, for garnish

In a large pot, cook the chopped bacon over medium heat until it is crispy. Remove the bacon with a slotted spoon and set aside, leaving fat in the pot.

    In the same pot, add the sliced onions and cook until they become translucent and soft, about 5 minutes.

      Add the minced garlic and thyme to the onions and cook for another minute until fragrant.

        Layer the sliced potatoes evenly over the onions and then add the sausage chunks and crispy bacon on top.

          Pour in the chicken broth and water, ensuring the ingredients are submerged. Season with salt and pepper to taste.

            Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.

              Once cooked, taste and adjust seasoning if necessary.

                Serve hot, garnished with freshly chopped parsley on top for a touch of color.
