4 large pork sausages (your choice of flavor, sweet or spicy)

2 lbs Yukon Gold potatoes, peeled and cut into chunks

1/2 cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste

1/2 cup chicken broth (low sodium)

1 tablespoon Dijon mustard

1 tablespoon chopped fresh parsley (for garnish)

Optional: 1/2 cup sautéed onions or caramelized onions

Instructions
 

Cook the Sausages: In a large skillet over medium heat, cook the sausages until browned on all sides and cooked through, about 12-15 minutes. Turn occasionally for even cooking. Remove and set aside, keeping warm.

    Prepare the Potatoes: While the sausages are cooking, bring a large pot of salted water to a boil. Add the potato chunks and cook until tender, about 15-20 minutes. Drain well.

      Mash the Potatoes: In the same pot, add the drained potatoes back in along with the whole milk, butter, salt, and pepper. Use a potato masher to combine until creamy and smooth. Adjust seasoning as needed.

        Make the Gravy: In the same skillet used for the sausages, add the chicken broth and Dijon mustard, scraping up any browned bits from the bottom. Let it simmer for 2 minutes to thicken slightly.

          Assemble the Dish: To serve, create a bed of mashed potatoes on each plate. Slice the sausages on an angle and place them atop the mashed potatoes. Drizzle with the gravy. If using, top with sautéed or caramelized onions for added flavor.

            Garnish: Sprinkle chopped parsley over the top for a fresh touch.
