8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

3 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1/2 cup breadcrumbs (optional)

1 tablespoon olive oil (optional for the breadcrumbs)

Instructions
 

Preheat your oven to 350°F (175°C).

    Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

      In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute to make a roux.

        Gradually pour in the milk while whisking continuously. Keep stirring until the mixture thickens, about 3-5 minutes.

          Add the garlic powder, onion powder, smoked paprika, salt, and pepper to the thickened sauce. Stir until well combined.

            Remove the saucepan from the heat and add the cheddar and mozzarella cheese, stirring until fully melted and creamy.

              Combine the cooked macaroni with the cheese sauce and mix well to coat evenly.

                If using breadcrumbs, mix them with olive oil in a small bowl to create a crunchy topping.

                  Pour the macaroni and cheese mixture into a greased 9x13-inch baking dish. If using breadcrumbs, sprinkle them evenly on top.

                    Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.
