6 pork sausages (your choice of flavor)

4 large potatoes, peeled and chopped

1 cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon Dijon mustard (optional)

Fresh parsley for garnish

Prepare the Potatoes: In a large pot, add the chopped potatoes and cover them with water. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are tender, about 15-20 minutes.

    Cook the Sausages: While the potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add the sausages and cook until golden brown on all sides, about 10-15 minutes. Ensure they are cooked through, turning them occasionally for even cooking. Once done, set aside and keep warm.

      Mash the Potatoes: When the potatoes are tender, drain them, and return them to the pot. Add the butter, whole milk, garlic powder, and Dijon mustard (if using). Mash until smooth and creamy. Season with salt and pepper to taste.

        Combine and Serve: On each plate, create a generous mound of mashed potatoes. Place the sausages on top or beside the mash, and drizzle with any juices left in the skillet.
