Ingredients
  

6 large eggs

1/2 cup milk

1 cup spinach, chopped

1/2 cup bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup green onions, sliced

Salt and pepper to taste

Optional: Cooked bacon or sausage, crumbled

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.

    In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.

      Fold in the chopped spinach, diced bell pepper, halved cherry tomatoes, shredded cheese, and sliced green onions into the egg mixture. If using, also add the crumbled bacon or sausage.

        Evenly distribute the egg mixture into the prepared muffin tin, filling each cup about 2/3 full to allow for rising.

          Bake in the preheated oven for 18-20 minutes or until the muffins are set and the tops are lightly golden.

            Remove from the oven and let cool for a few minutes. Run a knife around the edges to release the muffins and gently pop them out.

              Serve warm or allow to cool completely before storing in the refrigerator for up to a week.
