4 medium yams (sweet potatoes), peeled and cut into 1-inch cubes

1 cup brown sugar

1/2 cup unsalted butter, melted

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon cayenne pepper (optional, for a kick)

1 teaspoon vanilla extract

1/4 cup orange juice

1/2 cup mini marshmallows (optional)

Pinch of salt

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the melted butter, brown sugar, cinnamon, nutmeg, cayenne pepper (if using), vanilla extract, orange juice, and salt. Mix until well combined to form a glaze.

      Add the cubed yams to the bowl and gently toss them in the glaze until fully coated.

        Transfer the yam mixture into a greased 9x13-inch baking dish, spreading them out evenly.

          Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

            After 30 minutes, remove the foil and stir the yams gently. If using marshmallows, sprinkle them on top now.

              Return the dish to the oven uncovered, and bake for an additional 15-20 minutes or until yams are tender and caramelized.

                Once done, remove from the oven and let cool slightly before serving.
