2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

10-12 flour tortillas

Olive oil for frying

In a large mixing bowl, combine the shredded chicken, softened cream cheese, and shredded cheddar cheese. Mix until well combined and creamy.

    Add the diced bell peppers, chopped green onions, garlic powder, smoked paprika, salt, and pepper to the bowl. Stir until everything is evenly incorporated.

      Lay a tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the chicken mixture onto the lower third of the tortilla.

        Roll the tortilla tightly from the bottom, tucking in the sides to secure the filling, forming a spring roll shape. Repeat with the remaining tortillas and filling.

          Heat a skillet over medium-high heat and add a splash of olive oil. Once hot, place the rolled tortillas seam-side down in the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy.

            Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.

              Let cool for a few minutes before slicing them in half for serving.
