Ingredients
  

4 medium zucchinis

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 teaspoon red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Start by washing the zucchinis thoroughly. Using a spiralizer, create zucchini noodles (zoodles) by spiraling the zucchinis. If you don't have a spiralizer, you can use a julienne peeler or cut them into thin strips with a knife. Set aside.

    In a large skillet, heat the olive oil over medium heat.

      Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.

        Add the halved cherry tomatoes and red pepper flakes (if using) to the skillet. Cook for an additional 2-3 minutes until the tomatoes start to soften.

          Add the zoodles to the skillet, along with the salt and black pepper. Toss gently to combine, cooking for about 3-4 minutes until the zoodles are crisp-tender.

            Remove the skillet from heat and sprinkle the grated Parmesan cheese over the zoodles. Toss again until the cheese melts and coats the noodles evenly.

              Plate the zoodles and garnish with fresh basil leaves for a burst of color and flavor.
