4 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

4 slices of deli ham

1 cup shredded cheese (cheddar or your choice)

1/2 cup spinach or arugula (optional)

1 tablespoon olive oil

4 whole wheat tortillas

Instructions
 

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    Heat the olive oil in a non-stick skillet over medium heat. Once hot, pour the egg mixture into the skillet.

      Cook the eggs, gently stirring with a spatula, until they are scrambled and just set, about 3-5 minutes. Remove from heat and let cool slightly.

        On each tortilla, lay down a slice of ham followed by a spoonful of scrambled eggs, a sprinkle of cheese, and a handful of spinach or arugula if using.

          Carefully roll each tortilla tightly, wrapping it around the filling.

            Place the roll-ups seam-side down in the skillet to crisp up for about 1-2 minutes on each side, until golden brown and the cheese is melted.
