Ingredients

1 pound ground beef

1 cup uncooked long-grain rice

1 onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 cup beef broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons Worcestershire sauce

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, brown the ground beef until no longer pink. Drain any excess fat.

Add chopped onion and garlic to the skillet, sautéing for about 3-4 minutes until softened and fragrant.

Stir in the diced tomatoes (with juice), beef broth, Worcestershire sauce, paprika, and salt and pepper. Bring the mixture to a simmer.

Once simmering, add the uncooked rice and frozen mixed vegetables to the skillet, stirring to combine.

Remove from heat and pour the mixture into a greased 9x13 inch baking dish.

Cover the dish with foil and bake in the preheated oven for 30 minutes.

After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese on top. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Remove from the oven and let it rest for 5 minutes before serving.
