Easy Healthy BLT Chicken Salad

Ingredients
  

2 cups cooked chicken breast, shredded or diced

4 slices of crisp turkey bacon, chopped

1 large ripe tomato, diced

1 small cucumber, diced

½ red onion, finely chopped

1 large avocado, diced

4 cups mixed greens (spinach, arugula, and lettuce)

¼ cup plain Greek yogurt

1 tablespoon mayonnaise (optional)

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Prepare the Dressing: In a small bowl, mix the plain Greek yogurt, mayonnaise (if using), Dijon mustard, apple cider vinegar, salt, and pepper. Adjust seasoning to taste and set aside.

    Cook the Bacon: In a skillet over medium heat, cook the turkey bacon until crispy. Remove from the heat and let it drain on a paper towel.

      Combine Salad Ingredients: In a large salad bowl, combine the cooked chicken, chopped bacon, diced tomato, cucumber, red onion, and avocado.

        Add Greens: Gently fold in the mixed greens to the chicken and vegetable mixture.

          Dress the Salad: Drizzle the prepared dressing over the salad and toss gently to combine all ingredients without mashing the avocado.
