Easy Homemade Kulfi Ice Cream

Ingredients
  

2 cups whole milk

1 cup heavy cream

1 cup sweetened condensed milk

1/2 cup sugar (adjust to taste)

1/4 cup ground pistachios (plus extra for garnish)

2 tablespoons rose water

1/2 teaspoon cardamom powder

A pinch of saffron threads (optional)

1/4 cup chopped almonds (for texture)

Instructions
 

Heat the Milk: In a medium saucepan, bring the whole milk to a gentle boil over medium heat. Stir occasionally to prevent scorching.

    Thicken the Mixture: Lower the heat and let the milk simmer for about 15-20 minutes, or until it reduces to about 1.5 cups. Stir frequently to ensure it doesn't stick to the bottom.

      Combine Ingredients: In a large mixing bowl, combine the reduced milk, heavy cream, sweetened condensed milk, and sugar. Whisk until well combined.

        Add Flavorings: Stir in the ground pistachios, rose water, cardamom powder, and saffron (if using). Mix well to ensure even distribution of flavors.

          Incorporate Nuts: Fold in the chopped almonds for added texture.

            Pour and Freeze: Pour the mixture into kulfi molds or small cups. Cover with aluminum foil or a lid. Insert wooden sticks if using cups.

              Freeze: Place the molds in the freezer for at least 6-8 hours or until completely set.

                Serve: To remove the kulfi, run warm water over the outside of the molds for a few seconds. Gently pull out the kulfi and garnish with additional ground pistachios or chopped nuts, if desired.
