Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

3 large eggs

½ cup sour cream

¼ cup freshly squeezed lemon juice

Zest of 1 lemon

1 ½ teaspoons baking powder

¼ teaspoon baking soda

¼ teaspoon salt

½ teaspoon vanilla extract

Powdered sugar for dusting (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add in the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract and lemon zest.

In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, alternating with the sour cream and lemon juice, starting and ending with the flour mix. Mix until just combined.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.

Once cooled, dust the top with powdered sugar if desired for a light, elegant finish.
