1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/3 cup melted butter

2 ripe bananas, sliced

1 cup instant vanilla pudding mix

2 cups milk

1 cup whipped cream (store-bought or homemade)

1/2 teaspoon vanilla extract

Additional banana slices and whipped cream for garnish

Instructions
 

In a mixing bowl, combine the graham cracker crumbs and cocoa powder. Add the melted butter and stir until the mixture resembles wet sand.

    Press about 2 tablespoons of the crumb mixture into the bottom of each mini pie dish or muffin tin cup to form a crust. Use the back of a spoon to pack it down tightly.

      In another bowl, prepare the instant vanilla pudding by whisking together the pudding mix and milk for about 2 minutes or until thickened.

        Gently fold in the whipped cream and vanilla extract to the pudding mixture until well combined and fluffy.

          Place a layer of sliced bananas over the crust in each pie dish.

            Spoon the pudding mixture over the bananas, filling each crust to the top.

              Refrigerate the mini pies for at least 2 hours to set.

                Just before serving, add extra banana slices and a dollop of whipped cream on top of each mini pie for garnish.
