12 oz penne pasta (or pennette)

4 oz pancetta, diced

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Zest of 1 lemon

Fresh parsley, chopped, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Pancetta: In a large skillet over medium heat, add the olive oil. Once heated, add the diced pancetta and cook until crispy, about 5-7 minutes. Stir occasionally to ensure even cooking.

      Add Asparagus and Garlic: Add the asparagus pieces to the skillet with the pancetta. Sauté for 3-4 minutes until the asparagus is bright green and tender-crisp. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Create the Sauce: Lower the heat and add the heavy cream to the skillet. Mix well, and slowly add in the Parmesan cheese, stirring continuously until melted and combined. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.

          Combine Pasta and Sauce: Add the cooked penne to the skillet, tossing to coat the pasta evenly with the sauce. Season with salt, pepper, and lemon zest to taste.

            Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve warm and enjoy your delightful pasta dish!
