2 tablespoons olive oil

3 cloves garlic, minced

2 cups fresh spinach

1/2 cup sun-dried tomatoes, sliced (in oil for added flavor)

1 cup heavy cream (or coconut cream for a lighter option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and black pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.

    In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.

        Stir in the sun-dried tomatoes and sauté for an additional minute.

          Pour in the heavy cream, stirring until well combined. Allow to simmer for about 2-3 minutes until slightly thickened.

            Stir in the grated Parmesan cheese (or nutritional yeast), mixing until melted and creamy. If the sauce is too thick, add a splash of reserved pasta water until you reach the desired consistency.
