Ingredients

1 cup granulated sugar

1/4 cup light corn syrup

1/4 cup water

1 tablespoon unsweetened cocoa powder

1 teaspoon vanilla extract

1 package (10 oz) mini marshmallows

1 cup chocolate chips (milk or dark)

1 tablespoon coconut oil (or butter)

Sea salt, for sprinkling

Instructions

Prepare the Mold: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later. Lightly spray with cooking spray.

Cook the Sugar Mixture: In a medium saucepan over medium heat, combine sugar, corn syrup, and water. Stir until the sugar has dissolved. Increase the heat to high and bring the mixture to a rolling boil without stirring. Allow it to cook for about 5-7 minutes, or until it reaches the soft ball stage (235°F to 240°F).

Mix Cocoa: Once at temperature, remove from heat and carefully stir in the cocoa powder and vanilla extract until smooth.

Add Marshmallows: Mix in the mini marshmallows, stirring until they are completely coated with the sugar mixture and start to soften.

Set the Mixture: Pour the marshmallow mixture into the prepared baking dish, spreading it evenly. Let it set at room temperature for 30-60 minutes, or until firm.

Melt the Chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Coat the Scotchmallows: Once the marshmallow mixture is set, lift it out of the baking dish using the parchment overhang. Cut it into squares using a sharp knife. Dip each square into the melted chocolate, allowing any excess to drip off.

Finish with Sea Salt: Place the coated squares on a parchment-lined baking tray. While the chocolate is still melted, sprinkle a tiny pinch of sea salt on top of each scotchmallow.

Let Set: Allow the chocolate to harden at room temperature or place in the fridge for about 15 minutes to speed up the process.

Prep Time: 20 minutes | Total Time: 1 hour 30 minutes | Servings: 16 squares

                      - Presentation Tips: Arrange the scotchmallows on a decorative platter, and consider adding a few edible decorative sprinkles for a festive look, making them perfect for gifting or serving at a party!
