2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 cup cold soda water (or sparkling water)

1 cup vanilla ice cream

Fresh mint leaves for garnish

In a medium bowl, combine the sliced strawberries and granulated sugar. Toss gently to coat the strawberries with sugar, and let them sit for about 10-15 minutes to macerate. This will help release their natural juices.

    Once the strawberries are ready, take tall glasses or bowls and add a layer of the macerated strawberries (including some of the juices) to each glass.

      Carefully spoon a generous scoop of vanilla ice cream on top of the strawberries in each glass.

        Slowly pour cold soda water over the ice cream and strawberries until the glass is filled, creating a fizzy float sensation.
