Ingredients
  

1 lb ground beef (or turkey)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or canned)

1 can (10 oz) diced tomatoes with green chiles

1 packet taco seasoning mix

2 cups tortilla chips (slightly crushed)

2 cups shredded cheddar cheese

1 cup sour cream

2 green onions, chopped for garnish

Fresh cilantro, chopped for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, brown the ground beef over medium heat until fully cooked, breaking it apart with a spatula. Drain any excess fat.

      Add the black beans, corn, diced tomatoes with green chiles, and taco seasoning to the skillet. Stir to combine, and let simmer for about 5 minutes.

        In a 9x13 inch baking dish, spread half of the crushed tortilla chips evenly across the bottom.

          Pour half of the beef mixture over the chips, and then sprinkle 1 cup of shredded cheddar cheese on top.

            Repeat the layers with the remaining tortilla chips, beef mixture, and top with the rest of the cheese.

              Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let cool for a few minutes. Serve warm with dollops of sour cream on top and garnish with chopped green onions and cilantro, if desired.
