1 lb (450g) ground beef

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

2 cups red enchilada sauce (store-bought or homemade)

1 1/2 cups shredded cheese (Monterey Jack or Cheddar)

Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.

    Brown the Beef: Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Mix in The Goodness: Add the black beans, corn, cumin, chili powder, smoked paprika, salt, and pepper to the beef mixture. Cook for an additional 3-4 minutes until everything is heated through.

        Assemble the Enchiladas: Preheat your oven to 375°F (190°C). On each tortilla, spoon a generous amount of the beef mixture (about 1/4 cup). Roll the tortilla up tightly and place it seam side down in a greased 9x13 inch baking dish. Repeat until all tortillas have been filled.

          Sauce it Up: Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded cheese over the top, covering as much surface area as possible.

            Bake to Perfection: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
