4 slices of whole grain bread

4 large eggs

4 slices of smoked ham

1 avocado, mashed

1 cup baby spinach

1/2 cup shredded sharp cheddar cheese

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Salt and pepper to taste

1 tablespoon olive oil

Optional: hot sauce for serving

Instructions
 

Begin by heating a non-stick skillet over medium heat and adding the olive oil.

    Crack the eggs into the skillet, one at a time, and cook them sunny-side up, or to your preferred doneness (about 3-4 minutes). Season with salt and pepper.

      In the same skillet, lay down the slices of smoked ham and cook for about 2-3 minutes on each side until slightly crispy.

        While the eggs are cooking, toast the slices of whole grain bread until golden brown.

          In a small bowl, mix the mayonnaise and Dijon mustard together to create a spread.

            Once the bread is toasted, spread the mayonnaise mixture on one side of each slice.

              Assemble the sandwich starting with one slice of bread (spread side up), followed by baby spinach, the crispy ham, a sunny-side-up egg, a generous scoop of mashed avocado, and a sprinkle of shredded cheddar cheese.

                Top with another slice of bread (spread side down) and gently press down.

                  Repeat for the remaining sandwiches.

                    If desired, slice each sandwich in half and serve warm with a drizzle of hot sauce for an added kick.
