Ingredients
  

4 cups chicken or vegetable broth

2 large eggs

1 tablespoon cornstarch

2 tablespoons cold water

1/2 teaspoon ginger, freshly grated

1/4 cup green onions, finely chopped

1/2 cup frozen peas

1 teaspoon sesame oil

Salt and pepper to taste

Red pepper flakes (optional for a spicy kick)

Instructions
 

In a medium saucepan, bring the chicken or vegetable broth to a gentle simmer over medium heat.

    While the broth is warming, whisk the eggs in a small bowl until well combined.

      In another small bowl, mix the cornstarch with cold water to create a slurry.

        Add the grated ginger to the simmering broth, followed by the cornstarch slurry. Stir continuously until the broth thickens slightly.

          Slowly drizzle the beaten eggs into the simmering broth while stirring gently in a circular motion. This will create lovely ribbons of egg throughout the soup.

            Add the frozen peas and let them cook for 2-3 minutes, until heated through.

              Stir in the sesame oil and season with salt, pepper, and red pepper flakes if desired.

                Remove the soup from heat and garnish with chopped green onions before serving.
