Instructions
In a medium saucepan, whisk together the eggnog, cornstarch, granulated sugar, nutmeg, and cinnamon over medium heat.
In a separate bowl, whisk the egg yolks and then slowly pour in a bit of the warm eggnog mixture to temper the yolks, stirring constantly.
Pour the tempered egg yolk mixture back into the saucepan and continue to cook, stirring constantly, until the mixture thickens (about 5-7 minutes).
Remove from heat and stir in the vanilla extract. Allow the mixture to cool slightly before pouring it into the pie crust.
Smooth the filling into the pie crust using a spatula. Chill in the refrigerator for at least 4 hours or until set.
For the topping, whip the heavy cream with the powdered sugar until stiff peaks form.
Once the pie has set, spread the whipped cream on top of the pie and garnish with a dash of ground nutmeg.
Slice and serve chilled.
Notes
Serve slices on festive plates and add a sprinkle of nutmeg on each slice for an extra touch of holiday cheer.
