2 salmon fillets

4 cups cooked quinoa

1 cup cherry tomatoes, halved

1 cucumber, diced

1 avocado, sliced

1 cup baby spinach

3 cloves garlic, minced

2 tablespoons olive oil

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Salmon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
