4 ears of fresh corn, shucked

1 medium onion, chopped

2 cloves garlic, minced

1 medium jalapeño, finely chopped (seeds removed for less heat)

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 teaspoon ground cumin

1 teaspoon smoked paprika

2 tablespoons lime juice

Salt and pepper to taste

1/4 cup crumbled Cotija cheese (optional)

Fresh cilantro, for garnish

Prepare the Corn: Use a sharp knife to cut kernels off the corn cobs and set aside. Make sure to scrape the cob to get all the flavorful pulp as well.

    Sauté Aromatics: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, and jalapeño. Sauté until the onions are translucent and fragrant, about 5 minutes.

      Combine Ingredients: Add the corn kernels to the pot and stir for 2-3 minutes, allowing them to become slightly tender. Then, add the vegetable broth, cumin, smoked paprika, salt, and pepper. Bring to a gentle boil.

        Blend the Soup: Once boiling, reduce the heat and simmer for about 15 minutes. Use an immersion blender to purée the soup until smooth, or carefully blend in batches in a standard blender (be cautious of splatters when blending hot liquids).

          Add Cream and Lime: Return the blended soup to the pot, stir in the heavy cream (or coconut cream) and lime juice. Heat on low for about 5 minutes, letting the flavors meld together.

            Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or lime juice if desired.

              Serve: Ladle the soup into bowls, garnishing with crumbled Cotija cheese (if using), fresh cilantro, and a lime wedge on the side for added zest.
