Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice tolerance)

Salt and pepper to taste

2 large eggs, beaten

1/3 cup vegetable oil (for frying)

1/2 cup sweet chili sauce

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon rice vinegar

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

In a large bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well.

Dip each piece of chicken into the beaten eggs, then coat thoroughly in the flour mixture, ensuring even coverage.

Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the coated chicken pieces in batches, avoiding overcrowding the pan.

Fry the chicken for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

In a separate saucepan, combine the sweet chili sauce, soy sauce, and rice vinegar over low heat. Stir until warmed, about 2-3 minutes.

Add the fried chicken to the sauce and toss gently to coat all the pieces evenly. Cook for an additional minute to allow the chicken to absorb the flavors.

Remove from heat and plate the firecracker chicken. Garnish with sliced green onions and sprinkle sesame seeds over the top for a final touch.
