Ingredients
  

4 fish fillets (e.g., cod, tilapia, or snapper)

½ cup pitted Kalamata olives, chopped

2 tablespoons capers, rinsed and drained

1 can (14 oz) diced tomatoes (with juice)

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Cooked spaghetti or linguine (to serve)

Instructions
 

Prepare the Ingredients: Start by chopping the Kalamata olives and rinsing the capers. Mince the garlic and set all ingredients aside.

    Cook the Fish: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the fish fillets with salt and black pepper. Once the oil is hot, add the fish to the skillet and cook for about 3-4 minutes on each side, or until they are cooked through and flaky. Remove the fish from the skillet and set aside on a plate.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.

        Add Tomatoes and Seasonings: Pour in the can of diced tomatoes (with their juice) and stir in the chopped olives, capers, red pepper flakes, dried oregano, and a pinch of salt and black pepper. Bring the sauce to a gentle simmer and let it cook for about 5-7 minutes, allowing the flavors to meld together.

          Combine the Fish with The Sauce: Return the cooked fish fillets to the skillet, spooning some of the sauce over the top. Allow them to simmer in the sauce for an additional 2-3 minutes to absorb more flavor.

            Finish and Serve: Squeeze fresh lemon juice over the top for brightness. Serve the Fish Puttanesca over a bed of cooked spaghetti or linguine. Garnish with freshly chopped parsley.
