2 salmon fillets (6 ounces each)

1 tablespoon olive oil

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon sesame oil

1 cup jasmine rice

2 cups water

1 cup shredded carrots

1 avocado, sliced

2 green onions, chopped

1 tablespoon sesame seeds

Salt and pepper to taste

Marinate the Salmon: In a small bowl, whisk together olive oil, soy sauce, sriracha, honey, and sesame oil. Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let them marinate for at least 20 minutes.

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice and water. Bring to a boil over medium-high heat. Once boiling, reduce to low heat, cover, and let simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.

      Cook the Salmon: Preheat a skillet over medium heat. Remove the salmon from the marinade and place them skin-side down in the hot skillet. Cook for 4-5 minutes, then gently flip and cook for an additional 3-4 minutes until cooked through and slightly crispy on the outside.

        Prepare the Bowl: To assemble, divide the cooked rice between two bowls. Top each bowl with shredded carrots, sliced avocado, and the cooked salmon. Drizzle any remaining marinade over the top.

          Garnish and Serve: Sprinkle chopped green onions and sesame seeds over the bowls. Season with salt and pepper to taste.
