1 cup high-quality dark chocolate (70% cocoa), chopped

1/2 cup unsalted butter

3/4 cup granulated sugar

3 large eggs

1 teaspoon pure vanilla extract

1/2 cup unsweetened cocoa powder

A pinch of salt

Preheat your oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.

    In a heatproof bowl, combine the chopped dark chocolate and unsalted butter. Melt them together using a double boiler or microwave in short bursts, stirring until smooth and glossy.

      Once melted, remove the bowl from heat and whisk in the granulated sugar until well combined.

        Add the eggs one at a time, whisking vigorously after each addition until fully incorporated.

          Stir in the pure vanilla extract, unsweetened cocoa powder, and a pinch of salt. Mix until the batter is smooth and glossy without any lumps.

            Pour the batter into the prepared cake pan, smoothing the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until the edges look set, and the center has a slight jiggle.

                Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a serving plate. Peel off the parchment paper.

                  For the ganache, heat an additional 1/2 cup of dark chocolate in a bowl and 1/2 cup of heavy cream in a saucepan until just simmering. Pour the hot cream over the chocolate and let it sit for 2-3 minutes. Whisk until smooth and glossy.

                    Pour the ganache over the cooled cake, allowing it to drip down the sides. Let it set for at least 30 minutes before slicing.

                      Serve with fresh berries and mint leaves for garnish, if desired.
