Ingredients

1 cup cottage cheese (full-fat or low-fat)

3 large eggs, separated

1/4 teaspoon cream of tartar

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Salt to taste

Fresh herbs for garnish (optional)

Instructions

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the cottage cheese and egg yolks. Mix until smooth. If using garlic and onion powder, add those as well along with a pinch of salt.

In a separate clean bowl, whip the egg whites with the cream of tartar using an electric mixer until stiff peaks form. This will help create a fluffy texture.

Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the whites. Use a spatula and fold in batches until well combined.

Spoon the mixture onto the prepared baking sheet, forming 6-8 small mounds, leaving some space between them as they will spread slightly.

Bake in the preheated oven for 25-30 minutes, or until the tops are lightly golden and the edges feel firm to touch.

Once done, take them out and let them cool for a few minutes on the baking sheet. Serve warm or at room temperature.

                Prep Time: 10 mins | Total Time: 40 mins | Servings: 6-8

                  - Presentation Tips: Garnish the cloud bread with fresh herbs like chives or parsley for a pop of color. Serve on a wooden board for a rustic look. Enjoy it as a sandwich base or a side with your favorite dish!
