Instructions
In a medium bowl, whisk together the Greek yogurt, milk, eggs, honey (or maple syrup), and vanilla extract until well combined.
In a separate large bowl, mix the flour, baking powder, baking soda, and salt.
Pour the wet ingredients into the dry ingredients and stir gently until just combined—be careful not to overmix; some lumps are okay!
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
For each pancake, pour about 1/4 cup of the batter onto the skillet. Cook until bubbles form on the surface, approximately 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes or until golden brown.
Remove pancakes from the skillet and keep warm while you repeat with the remaining batter.
Serve warm with your favorite toppings like fresh berries, sliced bananas, additional honey or maple syrup, or a dollop of Greek yogurt!
Notes
Serve with fresh fruits or syrup for added flavor.
