4 Everything Bagels

4 slices Bacon

4 slices Sausage

4 slices Ham

4 slices Turkey Bacon

4 slices Cheddar Cheese

4 slices Swiss Cheese

4 slices Provolone Cheese

4 slices Pepper Jack Cheese

4 large Eggs

Salt and pepper, to taste

2 tablespoons Butter

Fresh chives, chopped (for garnish)

Instructions
 

Cook the Meats: In a large skillet over medium heat, cook the bacon, sausage patties, ham, and turkey bacon until crisp and heated through. Remove each type of meat from the skillet and set aside on paper towels to drain excess fat.

    Prepare the Eggs: In the same skillet, use the leftover grease to crack the eggs. Cook them sunny-side up or over-easy, seasoning with salt and pepper to taste. Cook until the whites are set, but the yolks remain runny (or however you prefer).

      Melt the Cheese: Line a baking sheet with parchment paper. Slice the bagels in half and place them on the sheet. On the bottom half of each bagel, layer one slice of each type of cheese (Cheddar, Swiss, Provolone, and Pepper Jack).

        Assemble the Sandwich: Top each cheese-covered bagel with a slice of each cooked meat: bacon, sausage, ham, and turkey bacon. Carefully place the fried egg on top of the meats.

          Broil the Bagels: Place the assembled sandwiches under the broiler (set to low) for about 2-3 minutes, or until the cheese is melted and bubbly, and the bagels are slightly toasted. Keep an eye on them to prevent burning.

            Finish and Serve: Once melted, carefully remove the sandwiches from the oven. If desired, sprinkle some chopped chives on top for a burst of freshness. Cap each sandwich with the top half of the bagel.
