6 large flour tortillas

1 cup cooked and crumbled breakfast sausage (or plant-based sausage)

6 large eggs

1/2 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

1/4 teaspoon garlic powder

1/4 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (optional for garnish)

Olive oil for cooking

Instructions
 

In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and bell peppers, sautéing until softened, about 5 minutes. Remove from the skillet and set aside.

    In the same skillet, add the crumbled sausage, cooking until browned and heated through. Drain any excess grease and set aside.

      In a mixing bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper. Pour the egg mixture into the skillet and scramble over medium heat until fully cooked.

        Once the eggs are cooked, add the sausage, sautéed vegetables, and shredded cheddar cheese into the skillet, mixing until the cheese melts and is well combined. Remove from heat.

          Lay out the tortillas on a clean surface. Spoon a generous amount of the filling onto the center of each tortilla, ensuring not to overfill.

            Fold in the sides of the tortilla and then roll it up tightly from the bottom to create a burrito.

              Wrap each burrito in parchment paper or foil to keep them fresh.

                Place the wrapped burritos in a ziplock freezer bag or airtight container and freeze for up to 3 months.
