8 large flour tortillas

8 large eggs

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled (or diced ham)

1/2 cup bell peppers, diced

1/2 cup onion, diced

1/2 cup black beans, drained

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Salsa (for serving)

Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add diced onion and bell peppers. Sauté for about 5 minutes until softened.

    Add Sausage: Stir in the cooked breakfast sausage (or ham) and cook for an additional 2 minutes until warmed through. Season with cumin, garlic powder, salt, and pepper.

      Scramble the Eggs: In a separate bowl, whisk the eggs and pour them into the skillet with the sausage mixture. Cook, stirring frequently, until the eggs are fully cooked and scrambled (about 5-7 minutes).

        Add Beans and Cheese: Once the eggs are cooked, gently fold in the black beans and shredded cheddar cheese. Remove from heat.

          Assemble the Burritos: Lay a tortilla flat and spoon about 1/4 of the filling mixture onto the center. Fold in the sides and then roll from the bottom up to create a burrito. Repeat with remaining tortillas and filling.

            Freeze the Burritos: Wrap each burrito tightly in plastic wrap or aluminum foil. Place them in a zip-top freezer bag or airtight container, and label with the date.

              To Reheat: When ready to eat, unwrap the burrito and microwave on a plate for 2-3 minutes or until heated through. (You can also bake them at 350°F for 15-20 minutes if you prefer a crispy tortilla.)
