2 lbs beef chuck, cut into 2-inch cubes

4 slices of bacon, chopped

3 cups beef broth

2 cups button mushrooms, quartered

2 large carrots, sliced

1 large onion, diced

4 cloves garlic, minced

2 tablespoons tomato paste

2 tablespoons all-purpose flour

2 tablespoons olive oil

1 teaspoon dried thyme

2 bay leaves

Salt and pepper, to taste

Fresh parsley, for garnish

Prep the Ingredients: Start by patting the beef cubes dry with paper towels and seasoning them with salt and pepper. Prepare all vegetables and set aside.

    Cook the Bacon: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside.

      Sear the Beef: In the same pot, without removing the bacon fat, add beef cubes in batches, browning them on all sides. This should take about 5-6 minutes for each batch. Remove the browned beef and set it aside with the bacon.

        Sauté the Vegetables: In the same pot, add the onion, carrots, and garlic. Sauté for about 5-6 minutes until the onions are translucent. Stir in the mushrooms and cook for an additional 3-4 minutes until they are slightly browned.

          Combine Ingredients: Sprinkle the flour over the sautéed vegetables and stir well to combine. Then add tomato paste, thyme, bay leaves, and return the bacon and beef to the pot.

            Add Broth: Pour in the beef broth, ensuring the meat and vegetables are fully submerged. Bring the mixture to a boil.

              Simmer: Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for 2-2.5 hours, or until the beef is tender and the flavors meld beautifully. Stir occasionally and check for seasoning, adjusting with more salt and pepper if needed.

                Finish and Serve: Remove the bay leaves before serving. To enhance flavor, let the beef bourguignon sit for at least 30 minutes off the heat before serving, allowing the sauce to thicken slightly.

                  Garnish and Enjoy: Serve in bowls, garnished with fresh parsley, alongside crusty bread or over mashed potatoes for a delightful meal.
